MASHED POTATOES WITH ROASTED TOMATOES:
Yet again a filling and an easy to make breakfast dish. When all you need is food, taste, satisfaction, and a good start to the day.
Ingredients:
FOR MASHED POTATOES:-
Boiled Potatoes: 3 large sized
Milk: 1 Cup
Butter: 1 tbsp
Black Pepper: 1 tsp
Salt
FOR ROASTED TOMATOES:-
Tomatoes: 2 medium-sized
Black pepper: 1tsp
Butter: 1tbsp
Salt
Preparation time: 10-15mins
Method:
Put the potatoes in a pressure cooker(as it is the fastest method) with water enough that the potatoes drown into it & add a tsp of salt. Boil them in full flame for 4-5 whistles so that the potatoes turn completely soft. Turn off the flame. Once all the steam oozes out, take the potatoes out and let them cool for 10mins. Peel all the potatoes and mash them well.
What were you doing while the potatoes were getting boiled?? Well, that's where you utilize or save your cooking time!๐
Meanwhile, get those tomatoes, wash them & cut into 1inch thick slices. You may refer to the image I've attached.
Get the milk, butter, pepper, salt measured & ready.
Take a wok and place it on one stove in low flame & heat a flat open pan in another stove and then bring the flame to low. (Please try to avoid non-stick cookware). Add butter in both, but do not wait for it to melt completely as this will burn the butter and change the smell and flavors too.
Place all the sliced tomatoes one by one on the pan. Sprinkle some salt & black pepper over it and let it cook for 4-5 mins on low flame.
We need to hurry up. Getting late for office, right?
Alright, add all the ingredients for mashed potatoes in the wok and mix it continuously until properly mixed. Cover it & let it cook for 2-3 mins. For additional flavors, you can sprinkle some chopped green onions to it.
Are we forgetting the tomatoes??
Flip all the sliced tomatoes upside down and again sprinkle some salt and the remaining pepper and let it cook for another 4-5 mins. Keep flipping and cooking until the tomatoes have slightly loosened up. It'll look juicy once we have achieved the desired texture. You can refer to the image for the visuals of the dish.

Is it necessary to click beautiful pictures of the dishes you cook? I mean, the time you put into getting beautiful pictures of the food you have prepared for a craving stomach will naturally make it cool down & lose its taste to some extent. Isn't it? ๐Actually, I tried doing that with some of my dishes and all I was left with was thanda khanaa. So, I click pictures only to keep a record for myself that I had tried something which I should remember so that I can cook it someday again just by looking at it. Yes, of course, the picture has to be clear and easy to understand. Please forgive me if the images don't please you. But my hungry stomach doesn't lend me much time for photography!
