Superhealthy Eggless Cake

Who doesn't like cakes?! Yes, there can be different choices with different people regarding the taste of cakes. Some like cakes of various flavors; some like it with loaded cream. There are also many who I have come across; including myself too- who like to have it clean, without any dressing, just the pure sponge with authentic taste. Although, I like chocolate dressing cakes too. Or maybe I like all types of cakes!😍

Desserts do work as a great stress reliever I must say. But, the ingredients it is made of doesn't seem to be really relieving to the body. And it is really hard to overcome the sin of dessert craving without actually committing it.

Ladies, especially during their PMS, hardly can stop their mouths from watering the moment they get the thought of a dessert. But, it is again that time of the month when you need to look after your health too as the body becomes sensitive to anything that can cause even slight harm to the body and mind.

After experiencing a lot of health issues by myself too, I feel anybody like me or not, needs to be cared for!

Limited and easily available ingredients; less cooking time; delicious warm cake on your plate. Why not!😀

INGREDIENTS:

Wheat flour(Atta)-  1cup
Roasted Semolina(Suji)-  1tbsp
Ghee/Butter-  1/2 cup
Powdered Jaggery(Gur)-  3/4 cup or a little less/more to satisfy your sweet tooth
Cold Milk-  1 cup
Vanilla Essence or any kind of flavored syrup of your choice-  1tsp
Baking Powder-  1tsp
Baking Soda(Soda bi-carb)-  1/2 tsp

Optional:
Cherries chopped-  1tbsp
Almonds chopped-  1/2 tbsp
Raisins-  1tsp
Cashew chopped-  1/2 tbsp
Fresh coconut grated-  2tsp
Walnuts chopped- 1/2 tbsp

Preparation time: 50-60 mins

Method:

Take a newspaper or a broad dish and sieve the flour, baking powder & baking soda together. Transfer it to a mixing bowl. Add Suji and jaggery to it and mix well.
In another bowl, pour the milk. Add butter or ghee and vanilla essence, or a syrup of your choice to it. Mix the liquids together and pour it into the mixing bowl containing flour mixture.

If you are going to use a microwave oven, then it's time to pre-heat the oven at 180 degrees Celcius. If you choose to bake in a pressure cooker then, place it in the stove at the lowest flame and cover it with the lid slightly open without locking it. Remember to remove the whistle.
Meanwhile,
Beat the mixture continuously in a clockwise direction for 4-5mins. Now, you can add the chopped nuts & fruits to the batter. Beat again in the same direction for another 5-8 mins.

*It's ok if you don't have a beater, you don't need to buy one!😊 Simply take a medium-sized spoon and stir the mixture continuously in the clockwise direction by taking tiny breaks in between. Because your hand might pain with continuous mixing trying to compete with a beater.😀

You can stop mixing once the batter has turned silky smooth without having any lumps in it.

Take a cake dish(microwave safe) or any dish which can easily be placed inside the pressure cooker. Paint the inside of the dish with butter/ghee or simply use your hand to apply it evenly. Woohoo! We are almost near the completion. Sprinkle flour into the dish in a way so that it completely covers the inside of the dish.
I feel like dancing right now. My mouth is already watery! But I shall wait for a couple of weeks to increase the craving as my husband's birthday is coming ahead and Cake is the one thing which I am definitely going to bake!😍

Alright, back to work people.
Now pour the batter into the dish quickly so that it settles evenly on all sides without leaving any bubbles. You can beat the dish from the side with your hand for the batter to sit properly. Sprinkle some nuts or cherries or chocolate bits on the top. Place it in the oven and set the timer to 35 mins. Let the wheel moving!

For the pressure cooker people; place a steaming tray stand in the cooker and then the dish containing the batter on it. Cover the lid(without the whistle). This time we lock the lid. Let the cooker put some pressure on the batter for 45mins.

Let the cake remain inside the cooker/oven for 5-10 mins after it is ready. Now carefully, we pull the dish out with a cloth and let the cake cool down for another 15mins. Better to place it under a fan because I am really hungry.

In case, you are a beginner and don't know how to get the cake out of the dish. Run a knife inside the edges of the cake. Place a plate upside down on top of the dish. Then, place one hand above to plate and with another hand lift up the dish and reverse it quickly. Remove your hand by placing the plate on the table. Tap the top of the dish with your hands on all sides and gently start raising the dish. The cake will automatically come out on the plate.
